New! CIA San Antonio's Latin Pop-Up DinnersJoin us for these unique experiences at The Culinary Institute of America.

Dine at the exclusive chef’s table (limited seating available) in the Latin Teaching Kitchen and enjoy watching our advanced bachelor’s degree students in action as they prepare a multi-course meal paired with regional wine and beverages just for you. These future stars in the hospitality industry are engaged in the CIA’s Latin Cuisine Studies program that immerses them in the cuisine and culture of Latin America. They will be planning and executing these one-of-a-kind dining events.

Friday, July 7, 2017—Tour of Mexico—SOLD OUT!
Recognized by UNESCO as a treasure to humankind, Mexico’s culinary heritage is fascinating and diverse. From Baja California to Northern Cuisine that focuses on Beef as an important role, to Cabrito from Monterrey, to the Pacific Coast Cuisine and it’s seafood, to the Altiplano and all that Mexico City has to offer, all the way to Oaxaca, land of Seven Moles, and the Mayan World in the Yucatan Peninsula. Mexican cuisine is a unique model of farming, ritual practices, old skills, culinary techniques and ancestral community customs and manners. That said, you will enjoy a wonderful tour of this country’s beautiful gastronomy.

Tuesday, July 18, 2017—Peru, Brazil, and The South Cone
Some of the largest countries in South America with such a diverse gastronomy, you will get to enjoy all the way from a Churrasco Experience, to a soft and rich Pao de Quiejo, along with Asados Argentinos and Uruguayos. From Choripanes, to Tiras de Asado and Chimichurri Blends, to traveling to Chile and Peru for Fresh Ceviches and Tiraditos. Cancellation Policy
A minimum of 14 days notice is required for cancellations in order to receive a full refund. Refunds will not be issued within two weeks of the dinner, however reservations may be transferred to another party.
