The Center for Foods of the Americas (CFA) is dedicated to fostering an appreciation of Latin American food through its educational efforts.
As part of The Culinary Institute of America, the CFA offers a bachelor’s degree concentration in Latin Cuisine Studies. CIA students study foods of Mexico, Brazil, Peru, Central America, and the Caribbean. They are immersed in the unique ingredients, techniques and cultural traditions of these regions.
In addition, conferences, like the annual Latin Cuisine Summit, include separate opportunities for CIA students, culinary professionals, and food enthusiasts to develop their interest and expertise in cuisines and wines of Latin America.
